I think I may have found viable cheap alternatives to stuff with gluten in it.

Cheap ass supermarket corn tortillas, big or small, can replace bread for mini pizzas, sandwiches and etc. Rice vermicelli is also really cheap if you know where to look and will pretty much cover all my pasta needs until I have a steady job and can afford to either make my own or get another alternative.

I already eat a shit ton of potato based foods that I often make myself (and I can find a potato flour without gluten in it to make my pierogies) and a whole lot of vegetable and meat soups (without noodles or with rice added for a starch) that I make myself too. For low energy days, there are a lot of canned soups that lack gluten, like ones that use rice instead of noodles.

Stir frying stuff will work well for me too. 

So I figure, go gluten free for maybe 3 months and see if I have results. When I get my primary care physician with medicaid set up I can see about celiacs tests too.

    mostly just substitute brown rice as...occasionally use quinoa or something else but
